Double chocolate espresso cookies

Easy to make and so delicious!

Preheat oven to 350 degree Fahrenheit 
Ingredients:

1 1/8 cups margarine

2 1/4 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cocoa powder

 1 teaspoon espresso powder or instant coffee

 2 cups sugar

3 medium eggs or 2 large

2 teaspoons vanilla 

2 cups semi sweet chocolate chips 


Method:

Cream butter and sugar with beater. Beat in eggs and vanilla. Mix in flour, cocoa, salt and baking soda until just incorporated. Stir in chocolate chips. Place mounds of cookie dough on parchment lined baking sheets and bake 12 minutes. Cool on baking sheet and transfer to cooling racks. Yield: approximately 4 dozen yummy cookies.
