Pumpkin Pecan Muffins


2 3/4 cups flour

1 Tablespoon baking powder

1 teaspoon soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon ginger

1 cup pecan pieces

2 eggs

2 cups pumpkin puree

1 cup greek yoghurt

1/4 cup molasses

3/4 cup brown sugar


Preheat oven to 375 degrees.

Combine the first 7 ingredients in a bowl. In another bowl mix well all remaining ingredients. Pour wet ingredients into the dry ingredients and mix only until incorporated. Try not to over mix.
Fill greased muffin tins. This recipe should make about 22 muffins.
Bake until browned approximately 20 minutes.

Serve with cream cheese, yoghurt or ice cream.
