Roasted Tomatoes

Ingredients:

tomatoes

olive oil

salt and pepper

fresh thyme

toasted coconut bread or your choice of toast

sharp white cheddar or your choice of cheese

cooling rack

cookie sheet

parchment paper

Method:

Preheat oven to 400 degrees Fahrenheit.
Place parchment paper and cooling rack on cookie sheet. Cut tomatoes into 3 slices.Drizzle with olive oil.Season with salt & pepper. Sprinkle with fresh thyme leaves. Bake 15 minutes. Serve ontop of toast and a slice of cheese. Enjoy. 
There is such an abundance of fresh grown produce in Kelowna. Dawson was given tomatoes from a wonderful person from Coldwell Banker and Jackie came home with beautiful tomatoes from the Yoga instructor. Lesson of the day, “Sharing is Caring”. Thanks for the saying Tom from yoga class :0) Dawson whipped up this tomato dish and we hope you will enjoy it as well!
