Vegan Black Bean Patties

Ingredients:

4 cups drained canned black beans

8 green onions finely chopped

2 limes, zest and juice

2 teaspoons garlic powder

1 teaspoon blackening spice

1 teaspoon Chipotle chili pepper powder

1/2 cup dried bread crumbs

1/2 cup parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon chili flakes

4 Tablespoons olive oil .

Method:

Put all ingredients except the oil in a bowl and mash until the ingredients are incorporated. There should still be whole beans in the mix. Take a look at the picture to see the desired consistency. Chill the mixture in the fridge for about 15 minutes. The time in the fridge will allow the mixture to bind. Remove from the fridge and shape into 8 balls. Press the balls down to form 3/4 inch thick patties. Heat oil in a non stick frypan over medium high heat. Place patties in pan making sure not to overcrowd and cook each side for about 5 minutes or until nicely browned.

How can I use these patties? Make a traditional burger or crumbled in a wrap or taco. Dawson would definitely sauce up a patty with some sweet chili sauce and Davis would most likely eat the patty with some cauliflower crumble.

These cooked or uncooked patties can be made in advance and stored in an airtight container for 5 days. You can also freeze the patties on a cookie sheet and transfer to an airtight container once frozen.
