Butter Tarts for Natalie’s Birthday

Butter tarts 

Ingredients:

Pie crust pastry for 12 muffin cups

1/2 cup raisins

1 cup boiled water

1/4 cup soft butter

 1/4 cup packed brown sugar 

1/4 teaspoon salt 

1/2 cup corn syrup

1 egg

1/2 teaspoon vanilla 


Method:

Soak raisins in boiled water for about 30 minutes. Roll out pastry and cut 4 inch circles to line muffin cups. Mix together butter, brown sugar, salt and corn syrup. Stir in egg and vanilla. Drain raisins and discard water. Distribute the raisins in the pastry lined muffin cups. Top with liquid mixture making sure not to overfill. Bake in preheated 400 degree oven for 15 minutes. Cool slightly and remove individual tarts to cooling rack.
