Taste Good – Feel Good Roasted Veggies

Leftovers if any can be used in wraps, salads, sandwiches, soups or pasta dishes. 
Preheated oven 450 degrees Fahrenheit 

Ingredients:


Purple cabbage 


Brussel sprouts 

Broccoli 

Yams

Olive oil

Salt & pepper 

Chili flakes 

Foil lined baking sheet
Method:Chop veggies into uniform 1 inch pieces. Dried veggies crisp up the best. Toss with oil and season with salt and pepper. Sprinkle with chilies if desired. Spread onto baking sheet and pop into the preheated oven. Roast for 15 minutes or until there are lightly toasted tips on the veggies. 
Note: Look in your fridge and pantry as the skies the limit with what you can add to the pan to roast. Try adding grapes for sweetness. Yes you heard it right grapes! Try grape seed oil, coconut oil or avocado oil instead of olive oil. Adding a drizzle of maple syrup or honey also adds a nice twist.
