Oatmeal Chocolate Chip Cookies

This recipe was passed onto them from their dear friend Jody.
Makes approximately 44 cookies. Do something kind for yourself and make these cookies. You will be happy that you made the best cookies ever!
Ingredients:
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter at room temperature
1 cup light brown sugar
1 cup white sugar
2 large eggs at room temperature
2 teaspoons vanilla
3 cups rolled oats
2 cups semisweet chocolate
Method:
Whisk together flour, baking soda and salt. In another bowl beat butter and sugars with a beater until pale and fluffy. Add eggs one at a time fully incorporating after each addition. Add vanilla and beat for a minute. Add flour mixture and beat until combined. Add in oats and chocolate and mix until just incorporated. Chill dough for an hour. Preheat oven to 350 degrees Fahrenheit. Place mounds of cookie dough on parchment lined cookie sheet or one that is sprayed with Pam. Bake 10 minutes. Cool on cookie sheet 5 mins before placing cookies on cooling rack.
