SHHHH don’t tell Gary Granola

Without fail he eats this everyday. The secret to his youth.

Now you can make it yourself. Now we (I the maker & you the smuggler) don’t have to sneak it out of Gary’s presence. I swear he can smell it. It’s like he has a 6th sense.

Preheat oven to 350 degrees

1 cup pumpkin seeds from bulk section at store.

115g fancy (or not) pecan halves (i use western family wf)

360g fancy shredded coconut (wf)

100g natural whole almonds (wf)

150g sunflower seeds hulled raw (wf)

1 Kilogram of large oat flake (i use Rogers)

110g almonds blanched and sliced (wf)

3/4 cup honey or maple syrup

1/3 cup coconut oil melted

1 teaspoon cinnamon

20 dates pitted and chopped

1/2 cup sweetened dried sliced cranberries(wf)

1/2 cup raisins

chia seeds and sesame seeds – as much as you want to sprinkle on your finished granola.

Ready?

Ok toast pumpkin seeds in oven for about 10 mins. Toast  pecans 10 mins. Toast coconut 10 mins. Toast whole almonds 10 mins. Put all these toasted items in a really large pan. In a large bowl combine sunflower seeds, oats, blanched sliced almonds honey, coconut oil, and cinnamon. Spread onto cookie sheets about the  thickness of a cookie and bake 18mins. You must keep an eye on the pans and occasionally stir to get consistent golden granola. Gary likes his granola on the dark side. Kinda like his humour.  You will be in the kitchen awhile so wash dishes , wipe down the counter and oh yes chop your dates if you haven’t already. Okay now that the oat mixture is nicely browned add it to the nuts.  Toss in the dates , cranberries, raisins and chia / sesame seeds. There you have it. We store the granola in the Freezer and take out enough for days at a time and leave in jar on the counter. Gary eats it with Greek Yoghurt (Because Karen said it has more protein) and lots of berries. There you have it…Enjoy your day!
