Gyoza
Gyoza or wonton wrappers
1 pound lean pork or half and half with beef or use ground poultry
5 leaves of Chinese greens chopped fine
1 stalk green onion cut small
1 clove garlic minced
1 piece of ginger minced
1 egg
1 Tablespoon sesame seed oil
1 Tablespoon soy sauce
1/2 teaspoon salt
Combine meat, Chinese greens, green onion, garlic, ginger, egg, sesame oil, soy sauce and salt. Place about 1 teaspoon of filling onto a wrapper. Moisten the top side of wrap with water, pull edges of wrapper toward centre, and pleat in a half moon shape. Heat oil in a non-stick pan on medium setting. Add gyoza and sauté until the bottoms are brown. Add water to half cover the gyoza. Cover tightly and cook 3-4 minutes. Serve with the sauce. Sprinkle with Japanese chilies if you wish.
gyoza sauce
1 Tablespoon water
3 Tablespoons soy sauce
3 Tablespoons vinegar
1 Tablespoon sake
2 teaspoons sugar
1/4 teaspoon dry mustard
5 drops tobasco sauce
Place all ingredients in a jar and stir.
