
Crunchy roasted chickpeas are a yummy snack that can also be used to top salads, soups or open face sandwiches.
Ingredients:
15 oz can chickpeas rinsed and dried.
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 -1 teaspoon olive oil
Method :
Preheat oven to 400 degrees Fahrenheit
Line a baking sheet with parchment paper or spray with Pam. Bake chickpeas without oil & spice for 15 minutes. Toss chickpeas with oil and spices. Bake 5 – 10 minutes. Take out and stir. Pop back in for 5 -10 minutes until crispy. Cool and store in airtight container up to 4 days.
