Super quick & savoury.
Ingredients:
2 teaspoon butter
Mushroom 4 small sliced
2 Tablespoons cooked pinto beans
2 Tablespoons corn
1 egg
2 Tablespoons shredded cheddar cheese
1 tortilla

Method:
Sauté mushroom in butter in a large frypan. Add beans and corn. Move everything over to one side of the frypan. Crack egg onto mixture. Spread shredded cheese and place tortilla on top of cheese on cleared side of the frypan. Now move the egg & vegetables around until the egg is cooked.
Lift the tortilla with the flipper to see if the cheese is crispy and completely stuck to the tortilla. If it isn’t give it just a little more time until it does. Place tortilla on plate cheese side down and top with veggie egg mixture. Slather with your favorite hot sauce. Eat open faced or roll into burrito.
