short spicy sausage with herbed orzo

Variation of a dish the Short family served Davis. “It’s a 10!”

Ingredients:

4 hot Italian sausages

4 firm ripe tomatoes thickly sliced

2 bell peppers halved

3 tbsp olive oil

2 cup orzo cook according to package

1 lemon

salt & pepper to taste

1/2 cup each of fresh chopped dill & basil (add parsley if you like ) if you don’t have fresh use 2 tsp dried basil & 1 1/2 tsp dried dill

3 green onions thinly sliced

Now then:

For the DRESSING whisk together 2 tbsp olive oil, lemon juice, salt & pepper.

prick sausages with fork , spritz olive oil on  tomatoes & peppers.

BBQ over medium high heat – sausages about 12 – 15 mins then   slice. BBQ veggies 2-5 until grill marks appear. Chop veggies into bite size pieces.

Toss orzo, dressing, sausage, vegetables and herbs. Season with s&p or more lemon juice to taste. Serve Immediately or at room temperature.
